Lemon Almond Bread with Whole Wheat Flour

I came across a recipe for a Lemon Almond Bread and decided to make it today.  :)




Preheat oven to 350 degrees.

You will need:

1 1/2 cups whole wheat flour
1/2 tsp salt
1 tsp baking powder
1 cup sugar
2 tbs lemon zest
3/4 cup almond milk- unsweetened
1/2 cup vegetable oil
2 eggs, slightly beaten
1 tsp fresh lemon juice
1 1/2 tsp homemade vanilla extract

In a small bowl mix your flour, salt and baking powder till combined.  In a large bowl, mix you wet ingredients and then add the dry until mixed.  Add to a pam coated loaf pan and bake for about an hour or until toothpick comes out clean.

While the loaf is cooling, make your glaze.  

1 cup powdered sugar
1 1/2 tbs fresh lemon juice
homemade vanilla extract

Mix the glaze and pour over the loaf.  Sprinkle some sliced almonds on top.  The glaze will dry a little.  The glaze was okay, but on the bread it's really good.  It complements it.

I'll be making this again.  If you're craving something with lemon this just might be what you need.

It's that good.
