Have you tried Betty Crocker's fun da-middles? They are really good and simple to make. They have Yellow cake with vanilla filling, Yellow cake with chocolate filling and Chocolate cake with vanilla filling. I used the yellow cake with vanilla filling for my banana cream pie cupcakes. I can't wait to try the others. :)
