Homemade Peanut Butter Cupcakes with Chocolate and Peanut Butter Frosting

 Today, is my friend, Crystal's birthday.  I made Peanut Butter Cupcakes with Chocolate and Peanut butter frosting.


How yummy does this look?


We are eating at Firebirds for lunch and then going to see the movie 'Snow White and the Hunstman'.  :)


I used 'Fat Girl trapped in a skinny body' Peanut Butter cupcake recipe.  And for the frosting I used 'Our best bites'.  How to get your frosting twist colors you can read the tutorial here.  I also added some pb cups to the batter and that idea came from our best bites as well.  :)  My own idea was to add some chocolate sprinkles on top and 2 little pb cups.  :)  I had some batter left over so I made a tiny cake with it so I could test everything.  It's pretty good.  :)  I will post the recipes later for you but for now I'm off to celebrate Crystal's birthday.  :)



Garden Progress- Day 50

Today, I went out and inspected my plants.  I wasn't very happy with somethings I saw.  :(

 I've got several tomatoes.  I didn't count them but there are a bunch.  They are doing great.  The plant seems very healthy.  I did notice a lot of spider webs and some little harmless spiders crawling around.  (mainly on the tomato cage)  I'm not a fan of spiders but I know they eat bugs so I will let them protect my tomatoes.  :)

This is the biggest tomato so far.  He's about the size of my fist.  YEY!  :)  I can't wait for them to turn red.

This is day 38 of my green bell pepper plant.  He's just losing more and more leaves each day.  I don't think he's going to get any peppers at all.  :(  I might have to get rid of him.  :(


Here's my red bell pepper plant.  I watered him yesterday (b/c he was looking wilted) and today when I watered he still had a ton of water around him.  I took some more soil and filled in the water hole hoping that would help it.  Maybe I'm over watering?  I'm not sure.  There were several leaves that had fallen off.  :(  I just googled why my leaves are falling off and some people suggested to add a tbsp of epsom salts to the water before you water the plants.  Also, I read to water with warm water and not freezing cold water.  Something else I might need to do is to plant some brightly colored flowers in a pot next to the plants so they help the peppers get pollinated.  (Marigolds or Zinnias)  I might be making a trip to Lowes this afternoon for some flowers and foodlion for some epsom salts.  :)  Cross your fingers for me.  :)


At least my one pepper seems to be good and it still growing.  :)

PB&J Banana Burrito


The other day for lunch I thought I would make a PB&J banana burrito.  It didn't turn out as nice and neat as I had hoped it would be.  haha  It was still good though and it was fun to assemble.  This would def be a fun lunch for kids.

Garden Progress- Day 45


Tomatoes are still growing and growing.  :)


My red bell pepper......I have lots of buds still but so far this is still my only pepper that's growing.


 This is day 33 of my green bell pepper plant.  Still really small.  There are some real small pepper buds but you can't really see in the picture.

New Things Monday

Last week, I stopped into IKEA with my little sister, Ashley and our Mother.  Ashley, wanted to pick up a few things so it was a quick stop.  We zoomed through the store while our mother waited at the IKEA Cafe.  At the check-out I saw some IKEA candy bars.  They were huge bars and 3 for $2.49.  (.83 cents per bar)  I figured this would be the perfect chocolate to keep in my cubby at work when I get that chocolate craving.  I can just break a chunk off (or two) and eat it.  :)  There are 3 different kinds to choose from.  Milk chocolate, dark chocolate and hazelnut.  I got 2 milk chocolate and 1 hazelnut.  The milk chocolate is awesome!  Love it!  :)

Agnes' Christening


Today, was a very special day.  Agnes Ann was Christened at St. Mary's Catholic Church.  I was baptized, had my Holy Communion and was Confirmed at this same church.  :)


Sharon's Godparents are Joe's sister Lisa, and Sharon's brother-in-law Bobby.

Kristen, Dave, Nate and I went in together for Agnes' present.  A bible with her name engraved on the front.  So, beautiful and I'm sure she will treasure forever.


After the Christening, we went to the Courtyard Marriot for the Sunday Brunch.  Kristen, Ashley, Eddie, Crystal and I went ahead while family photos were being taken at the church so we could quickly set up the room.  We put table numbers on the tables and flower arrangements (pictured below) that Sharon and I had put together.  We also blew up pink and light green balloons and had them on the table tied to a weight.  We hung a 'Joyous Christening' sign.  For favors (pictured above) Ashley made cake pops and Sharon's sister Carolyn brought handmade chocolate crosses.



 Here is Joe holding Agnes.  She's not very happy here.  I this is outfit number 2.  She had more outfit changes then Beyonce.  haha  :)

Here's Agnes' cake.  After the brunch Sharon hosted a after party at her house.  We sat around and chatted with each other.  Sharon also had a some chips, pretzels, candy and drinks for everyone to enjoy.  Kristen brought yum yums.  She used pink M&M's to keep with Sharon's theme.  They are def a popular treat.



We sang "Happy Christening to you" b/c well what do you sing?  LOL  Agnes put her left hand on the edge of the cake and got some icing on it.  haha

Sad day



My Great Aunt (Mary Shoaf) passed away on May 23rd.  She would have been 98.  Her funeral was on June 1st.  She was my grandpa's sister.  Mary was such a kind and sweet lady.  She was always so nice and funny.  I will miss her and I'll never forget our conversations and her great personality.
