Harry Potter and the Deathly Hallows: Part 2

Nate and I saw the final Harry Potter movie last night. We were both excited and so was the rest of the 10:30pm crowd at Muvico. I don't want to give any spoilers for those who haven't seen it yet but it was AWESOME!!! Loved it!! You won't be disappointed. I think I want to read the books now. :D

New Things Monday

Mountain Dew Pitch Black is gooooood. :) It's basically grape soda. And I love grape soda. :) It's only limited edition so it won't be out for long. My brother, said that this was out years ago and Mountain Dew brought it back. Maybe it will become a regular? If you see one and you like grape soda be sure to try it. :)

This weeks picture is of a 6-year-old girl named Diamond, who's a cancer patient. Her dream is to meet a real life Princess. Diamond's dream came true meeting Kate Duchess of Cambridge. This picture just makes me smile. :)

Soft Serve Homemade Ice Cream

For dessert tonight I got inspired by pinterest for this single ingredient ice cream. Looks like the original idea is from here. :) Also it looks like my friend Laura discovered this 'banana whipped trick' back in 2009. AWESOME!

You will need:

4 bananas, peeled, cut up and frozen for an hour (slighly overripe, with spots)
2 tbsps creamy peanut butter (I used wegmans reduced fat)
2 tbsp cocoa powder (dutch process, I used unsweetened Rademaker)
2 tbsp fat free milk

Mix up frozen bananas. I don't have a food processor so I used my blender. The original blog said you could use either. I didn't get the banana gravel or banana whipped look but I guess it's b/c my bananas weren't really frozen. I mixed for what seemed like forever. It still came out creamy. Then I blended in the peanut butter, cocoa powder and milk. Once it was done, I added to a tupperware container for a few hours. I took it out and it scooped right out perfectly. It was soft serve like. It tasted ok, and it's healthy. Until.......


I sprinkled a few peanut butter M&M's on top. :P MMMM

Homemade General Tso's Chicken

We made Homemade General Tso's tonight for dinner and it was by far the best we've ever had. We will def be making this again. We couldn't believe how good it was. Nate was so happy with it. :)

What you need: (for 2 ppl)

1 package boneless chicken thighs (6 in the package)
1 bottle general tso's sauce (iron chef)
2 packages of rice (we used teriyaki style)
black pepper

I baked the chicken thighs in the oven at 350 degrees. I think I baked them for like 45 min. After they were done I let them rest for 10 min. Then I cut each thigh up into little bite size pieces.

This sauce was delicious. They have others to choose from for other Chinese dishes and we might have to try some of the others one night. :)

Once the chicken was cut up, I added it to the pan and then added the sauce and pepper.

Then I put on the lid and let everything simmer (15-20 min) letting the chicken soak up the delicious flavors. :) I also added 2 spoons full of the cooked chicken water to tone down the spice a little.

I cooked the rice and dinner is done! I love the 90 second rice packs. Quick and easy! :)

Menu Board Project Update

I picked up magnets today at HOBBY LOBBY and I also got some super glue to glue on the magnets. :) I also found some cute food like stickers to make a different background.

I wiped everything off the 'glass' and you could still see the old writing. I was mad and thought I was a failure and wasted all my time. :( Nate rescued my project and wiped off the old words with his thumb and they came off. YEY! :)

Menu Board Project

I saw on pinterest a little while back about making your own menu board. I thought I could so do that. My friend Kristen did it. Read her blog here. I love Kristen's menu board and knew that I wanted to make one too. While at IKEA yesterday I found this picture frame for $1.99.

I figured I could put a cute 8 1/2 by 11 scrapbook paper behind the glass and write on it.

First tho, I took off the stand part. Don't need that.

I still need to get that other piece off.

First I added a piece of paper that I had with luggage. I thought cool you can use this as packing list. :)

Next I found a sheet with Santa and made a Christmas list. How neat? :)

Then finally I found a sheet with a beach sunset and wrote the menu. I still need to get some magnets for the back (that I will glue on) and then I'm going to keep this menu board on the fridge. For the paper I want to find something with a light background with a food theme. I think that would be best for a menu. :) Gotta find the right paper tho but this beachy one will do for now. I also think I want some more frames to make some more cute magnetic boards. Maybe I can make some and sell on etsy? :) So far, I've spend $2 on this project and that was for the frame. Love it! :)
