The other day at the doctors office I was reading through an old issue of better homes and gardens magazine. I came across a very simple recipe for Oreo Truffles. I knew I had to try to make them.

Rainy Friday
It's a chilly rainy Friday, here in Virginia. I decided to make some comfort food for dinner. Meatloaf, mashed potatoes and corn. Yum!! The house smells so good right now while everything is cooking. While I was washing my potatoes earlier I saw some great photo ops and I think they turned out really good. :)

Peanut Butter Cups
My friend Laura made Peanut Butter Cups the other day. It seemed so simple and so yummy so I decided to make them myself.
Peanut Butter Cups
3/4 cup chunky peanut butter
2 Tbsp confectioners sugar
12 oz milk chocolate
1/3 cup crushed graham crackers
Microwave peanut butter for 20 seconds until softened. Mix in confectioners sugar and crushed graham crackers until uniform.
Melt chocolate over a double boiler. I don't own a double boiler, so I just melted the chocolate in a saucepan and kept stirring till melted. Spoon a teaspoon of melted chocolate in the bottom of a baking cup. Tilt and rotate the baking cup to spread the melted chocolate up the side of the cup slightly. Scoop large rounded teaspoons of peanut butter mixture and press into a half dollar size patty. Place in baking cup, and cover with the rest of the melted chocolate.
Place in muffin tin to maintain shape, and refrigerate for 30 minutes or until firm. Makes 15 cups.

Grandma Runyon's Meatloaf
I made Grandma Runyon's meatloaf for dinner. I hadn't made it in a long time and it sure is comforting.
All you need is ground meat (I used turkey), 2 eggs, 2 slices of bread broken up little, pepper, and a can of stewed tomatoes. Mix it all together and add to your meatloaf pan. Bake at 350 degrees for an hour to an hour and a half. :)
I peeled, cut up and cooked potatoes, then mashed them adding some pepper, milk and butter. I hate peeling potatoes. But it's def worth it to have REAL mashed potatoes!!!
For dessert I made lemon bars again!! :)

Cookies.....
The lemon bars were a huge hit yesterday. My husband finished them all off. LOL He wants me to make them again and I will def be making them again!! Today, I decided to bake some cookies from scratch! I was so glad that I had all ingredients on hand. :)
INGREDIENTS:
COMBINE flour, baking soda and salt in small bowl. Beat butter, granulated sugar, brown sugar and vanilla extract in large mixer bowl until creamy. Add eggs, one at a time, beating well after each addition. Gradually beat in flour mixture. Stir in morsels and nuts. Drop by rounded tablespoon onto ungreased baking sheets.
BAKE for 9 to 11 minutes or until golden brown. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.

- 1 teaspoon baking soda
- 1 teaspoon salt

When life gives you lemons, just make dinner and dessert.
I was feeling for something lemony today. I figured since I hadn't made lemon pepper chicken in a while that it's time for some so I did. :)
